It was my birthday this week! Whoop whoop! That calls for some serious celebration, right?
Plus, Labor Day is this weekend. Long weekends ALWAYS call for a celebration and I’m all up for it. Fun celebrations merit a nice cocktail. So, I made these Cherry Mojitos! Say what?!
I’ve been obsessed with cherries this summer. I’ve been literally eating them almost everyday. This is just one fruit I can’t get enough of. So much so, that I made enough of this Cherry Simple Syrup to have around for my lemonades and Mojitos!
But, let me tell you about this Mojito. It’s mildly sweet, bubbly and absolutely refreshing. All you need are some pitted cherries, some slices of lime, mint leaves, cherry simple syrup, rum, prosecco and ice. Add 2-3 cherries, 2 slices of lime and about 4 mint leaves to the bottom of the glass and press them with a wooden spoons to release the flavors. Add cherry simple syrup, rum, prosecco and ice. That’s it! Nothing more to it. Just sit comfortably and enjoy!
If you are having a bigger crowd over, double or triple the recipe ingredients and mix directly into a pitcher. There. Your Labor Day weekend has just been made.
- 6 to 8 fresh mint leaves
- 6 to 8 fresh cherries, pitted
- 2 limes, sliced
- 2 to 4 ounces cherry simple syrup
- 2 ounces white rum
- ½ bottle prosecco
- ice cubes
- In a sturdy glass, combine the mint leaves, cherries and lime slices. Using a muddler or wooden spoon, crush the ingredients to release their flavors.
- Add the cherry simple syrup and rum. Slowly, pour in the prosecco until glass is almost filled. Add ice and top with a little mint and a cherry to garnish.
- Serve immediately.
