During hot summer days, there is nothing better than a fruity refreshing popsicle. I enjoy the store-bought, sugar-filled popsicles just as much as any kid. But, what if you could make your own popsicles healthy and filled with nutrients instead of sugar? Wouldn’t that just be amazing!
Well you are in luck my friends because that is just what I got for y’all today. I present to you the yummiest healthy spinach watermelon popsicles made with Kura protein powder. As I mentioned before, I have partnered with Kura to bring you a series of posts each month to show you that great taste does not need to be compromised for great nutrition.
Last month, I shared what has now become the must have smoothie at our home. This Chocolate Chip Cookie Smoothie was loved by all, big and small people at home, and so were these popsicles.
My family and I have very recently, 2 weeks ago to be exact, made a big move and changed the beautiful seasons and crazy rush of New York City for the more relaxed blue beaches and warm weather of sunny South Florida. It was a very sudden and surprising decision that came about in late April, right after my husband and I had gotten back to New York from attending Hispanicize here in Miami.
So far, I am loving it! Summer in South Florida very much reflects the type of weather of my native home island, Dominican Republic. It is hot y’all!
Naturally, finding fun delicious ways to keep cool during these hot days is of the essence. Having a pool we can jump into at any time really helps, and so does having yummy treats that are not only delicious, but nutritious as well.
I had the idea of adding spinach into these popsicles after a series of constant struggles with my daughter to have her eat her veggies. It really is nearly impossible to have her eat any vegetables, unless I take something she really enjoys eating and mask the vegetables in it.
So, I took two things really likes, watermelon and strawberries, and added some spinach. I mixed it all in a blender with a little simple syrup and a scoop of Kura vanilla protein powder (my favorite) for added nutrition. Kura offers 26 vitamins and minerals, 5 gm of fiber, no added sugar and is GMO’s free. I then, added the mix along with some pieces of fresh strawberries and watermelon into a popsicle mold. Popped it in the freezer for at least 4 hours and voula! We have healthy popsicles.
Healthy Spinach Watermelon Popsicles
- 1 scoop protein powder
- 1 1/2 cups fresh baby spinach
- 2 3/4 cups watermelon , cubed, separated
- 6 medium strawberries , cubed, separated
- 1/4 cup simple syrup
- In a blender, mix protein powder, baby spinach, 2 cups watermelon, 4 strawberries and simple syrup.
- Add the remaining watermelon and strawberry pieces into popsicle molds.
- Fill popsicle molds with the mix from the blender.
- Freeze for at least 4 hours.
