We’re right in the middle of spring but this week has been feeling more like summer around here. I love warm temperatures and all the fun that comes with it. But at this very moment, I am still only beginning my spring cleaning.

When I start spring cleaning, I always begin in the kitchen. Mostly because it is the one place in the house I buy stuff for every week. I feel it is important to clear and clean the kitchen first so that when I go grocery shopping the next time, there is free room for the food.
So let me give you the spring cleaning tip, clear out and clean the fridge first.

I remember when I was young back in the Dominican Republic, my aunt used to clean out her fridge and on that day, she would always cook Chofán (Chow Fan).
Chofán is simply Dominican Style Fried Rice. There is a very big community of Chinese immigrants in the Dominican Republic and over the years some of our foods have been influenced by Chinese culture.
So, do like my aunt did. Clear out your fridge and use the leftover chicken and rice to cook this delicious fried rice.

- 3 tablespoons vegetable oil
- 1 cup cooked ham cubed
- 1 carrot cubed
- ¼ cup red onion chopped
- ¼ cup red bell pepper chopped
- 2 cup frozen peas thawed
- 2 cup sweet corn
- 4 cups white rice cooked
- 1 boneless skinless, chicken breast, cooked and cubed
- 4 tablespoons soy sauce
- 2 eggs scrambled
- 2 tablespoons green onions chopped (plus more for garnish)
Heat the oil over high heat in a wok (or a big pot, if you don't have a wok). Add the ham and cook stirring occasionally for about 4 minutes. Add the carrots and stir; let cook for about for 1 minute.
Add the onion and peppers and stir for about 2 minutes. Add rice, peas and corn. Mix well until there are not clumps of rice left. Add the soy sauce and mix well.
Add cooked chicken, eggs and green onions. Mix until well combined.
Remove from the heat and serve. Garnish with green onions.
