Homemade Popsicles
Popsicles are always a great summer treat option that the kids love and rather than buying them at the store all the time, I try to make more simple and healthy options at home.
The first day of summer kickstarts #PaletasWeek and my friend Lola from Lola’s Cocina invited me to create a fun popsicle recipe in celebration of summer. I gladly accepted and here we are with a delicious Mango Raspberry Yogurt Popsicles recipe that is packed with summer flavors.
How to Make Popsicles
To make these delicious ice pops you’ll need:
- Fresh mangoes
- Fresh raspberries
- Lime juice, freshly squeezed
- Honey
- Coconut Greek yogurt
First, using a smoothie blender, you want to puree the raspberries with honey to bring out the sweetness of the fruit. Reserve in a bowl. Then, puree the mango with honey and lime juice until smooth.
Using popsicle molds, layer the popsicles as follows; 2 teaspoons raspberry puree, one teaspoon of yogurt, two teaspoons mango puree and repeat. Gently tap the mold on the countertop to remove any air bubbles. Insert popsicle sticks, and then freeze for at least 6 hours, or overnight.
That’s it! Healthy, delicious, incredibly easy and entirely customizable. You can really create all kinds of flavors by just substituting for your favorite fresh fruit. These mango raspberry yogurt popsicle will be a hit with kids and adults alike.
