Queso Fundido with Chorizo

This ooey, gooey melted cheese with chorizo, tomatoes, cilantro, scallions, jalapeños, and a little tequila is the perfect party appetizer.

Ingredients

  • 10 oz pork chorizo
  • 2 jalapeños, seeded and finely chopped
  • 1/4 cup tequila
  • 8 oz Monterey Jack cheese, shredded
  • 8 oz Cheddar cheese, shredded
  • half of a small tomato, chopped
  • 1 scallion, chopped
  • 1 tablespoon cilantro, chopped
  • tortilla chips, for dipping

Instructions

  • Preheat oven to 375 degrees.
  • Heat a medium-size skillet over medium-high heat. Add the chorizo and chopped jalapeño.
  • Cook, stirring, until the chorizo has browned, about 5 minutes. Add tequila to deglaze the skillet and let it reduce. Turn off the heat. Remove half of the chorizo and reserve.
  • In a medium bowl, mix both kinds of cheese. Add cheese to the skillet right over the leftover chorizo.
  • Add the reserved chorizo on top and place skillet in the oven. Bake until the cheese has melted, and the edges begin to brown, about 10-15 minutes.
  • Serve immediately with a side of tortilla chips.
