- 3 tablespoons vegetable oil
- 1 cup cooked ham cubed
- 1 carrot cubed
- ¼ cup red onion chopped
- ¼ cup red bell pepper chopped
- 2 cup frozen peas thawed
- 2 cup sweet corn
- 4 cups white rice cooked
- 1 boneless skinless, chicken breast, cooked and cubed
- 4 tablespoons soy sauce
- 2 eggs scrambled
- 2 tablespoons green onions chopped (plus more for garnish)
Heat the oil over high heat in a wok (or a big pot, if you don't have a wok). Add the ham and cook stirring occasionally for about 4 minutes. Add the carrots and stir; let cook for about for 1 minute.
Add the onion and peppers and stir for about 2 minutes. Add rice, peas and corn. Mix well until there are not clumps of rice left. Add the soy sauce and mix well.
Add cooked chicken, eggs and green onions. Mix until well combined.
Remove from the heat and serve. Garnish with green onions.
