Hold the avocado gently in one hand. With a large knife in the other hand, cut the avocado lengthwise around the seed.
Give the two halves a little twist and open them to expose the pit.
Carefully and gently, tap the pit with the knife. Give it enough force so that the knife edge slightly wedges into the pit. Twist the pit out. Pinch the pit off from the top edge of the knife and discard.
At this point, you can peel the avocados in different ways. You can simply peel off the skin leaving both halves whole or scoop it out with a spoon. You can also slice or cube the avocado by running the knife through the avocado in a cross pattern being very careful not to cut through the peel. Then, use a spoon to scoop out the avocado pieces and transfer into a bowl.
