Grilled Chicken Skewers with Guava BBQ Sauce

These grilled chicken skewers are glazed with the most delicious guava BBQ sauce and they are sure to be the main star at any meal! Easy to make, they are ready to serve in 30 minutes.

Ingredients

  • 8-10 skewer sticks
  • 2 ½ pounds chicken breast boneless, skinless, cut into 1 inch cubes
  • ½ cup green bell pepper cut into 1 inch pieces
  • ½ cup red bell pepper cut into 1 inch pieces
  • ½ cup yellow bell pepper cut into 1 inch pieces
  • ½ cup Spanish onion cut into 1 inch pieces
  • Salt and pepper to taste

For the Guava BBQ Sauce

  • 1 cup guava paste
  • 1 1/2 cup original BBQ sauce
  • 1 garlic clove
  • ¼ cup lime juice
  • 1 tablespoon apple cider vinegar

Instructions

  • Heat outdoor grill to medium-high heat.
  • Thread chicken and vegetables alternately onto skewers. Season chicken and vegetable skewers with salt and pepper to taste.
  • Place chicken skewers on the grill to cook turning occasionally until charred, about 10-15 minutes.
  • In a medium saucepan combine guava paste, barbecue sauce, garlic, lime juice, and vinegar. Bring to a slow simmer and stir until the guava paste has melted and the sauce is smooth, set aside.
  • When skewers are almost done, brush with guava barbecue sauce and grill until done.

Notes

  • If you can’t find guava paste at the store, you can use guava preserves.
  • You can use metal or wooden skewers. If using wooden skewers, soak them in water for about an hour before grilling to keep them from burning in the grill.
  • Be sure to cook the chicken all the way through. The outside should be slightly charred and have a uniformed white color inside. If you have an instant-read thermometer they should register at 165F.
