- 1 cup jarred sliced peaches, drained and cubed
- 1/2 cup red onion, chopped
- 1 small tomato, chopped
- 1 medium jalapeño, chopped
- 1 tablespoon roughly chopped cilantro
- juice of 1 lime, freshly squeezed
- salt and pepper to taste
In a medium bowl, mix peaches, onion, tomato, jalapeño, cilantro and lime juice.
Season with salt and pepper to taste.
- Chop the peaches into similar-sized pieces so that they mix well with the other ingredients.
- If you don't like cilantro, you can swap this for fresh parsley.
- Use fresh lime juice rather than bottled for the zingiest flavor.
