Ingredients

  • 1 cup jarred sliced peaches, drained and cubed
  • 1/2 cup red onion, chopped
  • 1 small tomato, chopped
  • 1 medium jalapeño, chopped
  • 1 tablespoon roughly chopped cilantro
  • juice of 1 lime, freshly squeezed
  • salt and pepper to taste

Instructions

  • In a medium bowl, mix peaches, onion, tomato, jalapeño, cilantro and lime juice.
  • Season with salt and pepper to taste.

Notes

  • Chop the peaches into similar-sized pieces so that they mix well with the other ingredients.
  • If you don't like cilantro, you can swap this for fresh parsley.
  • Use fresh lime juice rather than bottled for the zingiest flavor.
